This blog post will be on the history of pizza. The first documented use of the word pizza was in 997 AD in Gaeta, Italy. Pizza started out as a Roman flat bread known as "panis focacius" to which topping were added. Many variations of this flat bread were created in countries such as Greece and France and this flat bread was even thought of as food for poor people in Italy at one point. Then finally on the 11th of June 1889 to honour the Queen Margherita the Neapoliton pizzamaker  Raffaele Esposito created the Margherita pizza we know today. He used tomatoes, mozzarella and basil as these are the three colours on the Italian flag. Today pizza is a savoury dish but until the early twentieth century it was a sweet dish.
